Costoluto Toscana Tomato

This type of tomato is marked by its good compactness. The berry has a soft pulp and the taste is pleasantly aromatic. The harvest can start when most of the fruit turns from green to red. The Costoluto Toscana Tomato is particularly suitable for salads. The characteristic element of the berry are the ribs, whose walls often also fall far inside the fruit, giving rise to the typical conformation from which this vegetable takes its name. The internal flesh, homogeneous and quite consistent, is very red, juicy, tasty and aromatic. The berry is excellent for fresh consumption, but also lends itself well to the preparation of sauces (after scalding and peeling). Once this type of tomato was considered the basis for the preparation of the pappa with tomato and other typical Florentine dishes.
